Ingredients
  

  • 3 medium crisp apples (Granny Smith, Fuji, or Gala work best), cored and diced
  • 1 cup assorted taffy pieces, roughly chopped
  • 1 cup red or green grapes, halved
  • 1/2 cup fresh berries (blueberries or raspberries)
  • 1/3 cup walnuts, lightly toasted
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons honey
  • 2 tablespoons freshly squeezed lemon juice
  • A pinch of salt

Instructions
 

  • In a large mixing bowl, combine the diced apples, taffy pieces, halved grapes, and fresh berries. Since apples can brown, quickly toss them with lemon juice to preserve their color.
  • In a small bowl, whisk together the honey, lemon juice, and a pinch of salt until the dressing is smooth and well-blended.
  • Pour the dressing over the fruit mixture, and gently toss until every piece is evenly coated.
  • Sprinkle the toasted walnuts and chopped mint leaves over the top, then gently mix again.
  • Cover the bowl and refrigerate for about 10 minutes to allow the flavors to meld together.
