  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • One 14.5-ounce can of diced tomatoes with no extra salt
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 bay leaf
  • 1 cup carrots, chopped
  • 1 cup bell peppers, chopped

Instructions
 

  • In a spacious pot, warm the olive oil on medium heat. First, add the beef cubes, seasoning them lightly with salt and pepper. Sear the beef on all sides until they develop a rich brown crust.
  • Then, incorporate the chopped onion and minced garlic into the pot. Stir continuously until the onion becomes soft and translucent. Consequently, the aroma will fill your kitchen.
  • Then, stir in the tomato paste and cook for 1 minute, allowing it to mix well with the other ingredients. Afterward, pour in the beef broth and add the diced tomatoes.
  • Add the dried rosemary, thyme, bay leaf, chopped carrots, and bell peppers. Bring the mixture to a gentle simmer. In addition, cover the pot with a lid.
  • Reduce the heat to low and let the dish cook slowly for about 2 hours 30 minutes. During this time, the beef becomes tender and absorbs all the flavors.
  • Finally, remove the bay leaf, adjust the seasoning if needed, and serve hot with your favorite side dish.
